Enough already….no food photos….Thank you.

This is my Go-To Blue Zone Challenge Lunch Simple ingredients – Organic Sourdough Flatbread, organic tomatoes, organic chiffonade spinach… sprinkled with olive oil, ground pepper, & oregano. Bake in oven.

I received so (too) many pics of someone’s dish they just plated at home – during the pandemic. It made me nauseated. And, please no more square plates.

So here I am…..sending you a photo of my Blue Zone dish. Go figure.

But for Readers who are ‘challenged’ to find Blue Zone-worthy lunch choices, I wanted to share this wonderfully tasty and healthy and inexpensive meal.

As I wrote before, it’s not about MY life or MY food or MY anything….it’s about finding the positives that work…..so I can share them with YOU.

Sprinkle a little low-fat mozzarella cheese before baking [If you don’t want to go completely vegan – here’s how I jazz the dish up with a little cheese!]
